paleo wannabe

As my life has been more chaotic than normal lately (work, school, the process of finding a house and preparing to move, upcoming vacation), health and fitness has been on the backburner.  I’m still reading some health blogs and storing up ideas for after vacation/moving, when I have time to think.  My plan then is to start eating Paleo, and (maybe) have Baby Brother–who is thinking about going back to school for healthy lifestyle/personal training–set me up with a feasible workout program, so I can get my health and fitness to a level I’m happy with.  I’ll just consider myself in the research phase for a bit longer (so my brain doesn’t explode with stress).  However, I did try out this awesome muffin recipe from Monica over at Run, Eat, Repeat this morning.  Yum!  (Caveat:  I added dark chocolate chips and walnuts, only one of which can stay when I’m doing paleo).  These were so easy, and so good!  I’m always amazed at people who come up with awesome recipes.  Left to my own devices, I’m much more likely to hit a fast food place than invent something.  Clearly, I need to work on that…

Anyone know any good paleo (or no-sugar, no-grain) recipes?
