So, my intention for Mondays was/is to blog about food (with a side of fitness). I frequently have good intentions. It’s just my follow-through is sometimes a bit lacking. Like, I didn’t blog at all Monday. Sigh. But that’s because I ended up being at the office for almost seven hours waiting for a delivery to arrive, instead of the expected three or four. I did get rather a lot of other things accomplished, which was good. The office is so peaceful when you’re the only one there…Anyway. Since blogging didn’t happen on Monday, looks like I have two posts due here today (not to mention a book review over on my writing blog). And a mid-term. Some other homework. Some actual writing. A bit of revisions…bigger sigh.
But first I’m going to talk about someone whose blog I’ve been reading for…I don’t know, probably a year and a half now: Janae over at The Hungry Runner Girl. I started reading this blog when I started running (which I’m not currently doing). Janae is so inspiring! Single mom, raising a little girl, tries to eat healthy but also enjoys food, and she’s a super fast (all I can do is shake my head when I read her paces) runner shooting for a sub-3 -hour marathon. Wow. And she seems like a genuinely nice person, who spends a ton of time with her family and her friends, as well as being involved with her church. Awesome! Reading her blog also usually makes me hungry, since she always has fantastic food pictures up.
Today, I’m going to make her Chicken Cream Cheese Chili, even though it’s supposed to be 70 degrees here, because it sounds fantastic (and pretty healthy). I may make some garlic cheddar biscuits to go with it, because yum. Also, if I have enough time, these Banana Bread Nutella Muffins from Chocolate Covered Katie (because Nutella is amazing and also something I don’t usually buy…so I don’t eat the whole thing at once time).
As far as fitness goes, probably my only workout today will be feeling guilty. Super Mom couldn’t meet up this morning at 5 a.m., and there’s a spot on the bottom of my right foot that has been hurting since yesterday afternoon, so I’m not feeling it today.
