Linking up with Meghan over at Clean Eats, Fast Feets.
This week was fall break for me, and it’s been a pretty good week, apart from a near-meltdown at work last Monday.
I got my grade for my Writing Commercial Fiction class: I made a 90! (Which is an A- at my school, not an A, but still good.) Studies in World Literature starts this week. It’s my last undergrad class…and I’ve had the professor before. Last spring, for American Women Writers. I worked my butt off and still made a B…
Saw my doc on Thursday and he says I’m doing great and my labs are better than they’ve ever been! He’s taking me off my combo BP med and putting me on a single med, with the long-term goal of being off of it entirely, as well as off the full aspirin I take daily and down to 2 baby aspirin (I’ll be taking aspirin and cholesterol med for the rest of my life preventative).
I signed up for 3 races:
-a 5k in 3 weeks.
-a 10k the first weekend in December.
-a half marathon the last Sunday in February!
Switched training plans this week to the My Asics app, and I’m really liking it.
Did some cooking:
I’ve been eating these simple breakfast tacos all week (scrambled egg whites, cheese, fresh salsa, and guacamole on a corn tortilla).
Had a soup craving, so I emptied out my freezer jar of scraps to make it. (Thanks, Meghan, for that idea.) I keep a huge jar in the freezer for my veggie scraps and stuff like chicken bones. I added a can of fire-roasted tomatoes, plus some garlic and onion bullion cubes and simmered it fora few hours. Tasty!
Last week I made sugar-free Sweet and Sour chicken, and it’s so good!
I worked an extra day on Tuesday for a total of 46 hours in 4 days.
Spent Saturday cleaning out my closet, and cleaning off my desk (which was buried) and the computer room. I’m so happy with the tidiness!
That’s it for me this week.
That’s great news about your lab work. Hooray for health. Also, an A- is awesome. Nicely done.
You’ve got some races coming up. I love the ambition and know you’re gonna rock them.
Veggie stock for the win.
Happy Monday and thanks for linking up.
Thanks!
